Italian Chicken

ingredients

  • 2 Italian hot sausages sliced into 1/2" pieces
  • 2 Italian sweet sausages sliced into 1/2" pieces
  • 2 whole chicken breasts boned, skinned, and halved
  • Flour
  • Oregano
  • 2-Tbs. olive oil
  • 1 chopped onion
  • 1 diced green pepper
  • 8 oz sliced fresh mushrooms
  • Garlic
  • 16 oz can of Italian Plum tomatoes drained and quartered (reserve juice) 1/2 cup red wine
  • Basil
  • Pepper
  • Italian seasonings

    Brown in large skillet 2 Italian hot sausages sliced into 1/2” pieces and 2 Italian sweet sausages sliced into 1/2” pieces.

    Drain on paper towels and set aside.

    Add 2 whole chicken breasts boned, skinned, and halved; dredged in flour, oregano etc.

    Brown, remove and set aside

    Drain pan and sauté 2-Tbs. olive oil, 1 chopped onion, 1 diced green pepper, 8oz sliced fresh mushrooms and garlic.

    Add chicken, sausage, 16oz can of Italian Plum tomatoes drained and quartered (reserve juice), 1/2 cup red wine, basil, pepper and Italian seasonings.

    Cover and simmer 45 to 60 minutes adding tomato juice as needed.
