Italian Chicken
ingredients
- 2 Italian hot sausages sliced into 1/2" pieces
- 2 Italian sweet sausages sliced into 1/2" pieces
- 2 whole chicken breasts boned, skinned, and halved
- Flour
- Oregano
- 2-Tbs. olive oil
- 1 chopped onion
- 1 diced green pepper
- 8 oz sliced fresh mushrooms
- Garlic
- 16 oz can of Italian Plum tomatoes drained and quartered (reserve juice) 1/2 cup red wine
- Basil
- Pepper
- Italian seasonings

Brown in large skillet 2 Italian hot sausages sliced into 1/2” pieces and 2 Italian sweet sausages sliced into 1/2” pieces.

Drain on paper towels and set aside.

Add 2 whole chicken breasts boned, skinned, and halved; dredged in flour, oregano etc.

Brown, remove and set aside

Drain pan and sauté 2-Tbs. olive oil, 1 chopped onion, 1 diced green pepper, 8oz sliced fresh mushrooms and garlic.

Add chicken, sausage, 16oz can of Italian Plum tomatoes drained and quartered (reserve juice), 1/2 cup red wine, basil, pepper and Italian seasonings.

Cover and simmer 45 to 60 minutes adding tomato juice as needed.
