Wheat Berry Salad
ingredients
- 1 cup raw soybeans, soaked for 4 hours
- 1 cup raw winter wheat berries, soak for 1 hour
- 1 bunch fresh green onion, trimmed and chopped
- 1 medium finely diced purple onion
- 1 red bell pepper, small diced
- 1 carrot, small diced
- 1 cucumber, chopped
- 2 stalks celery, trimmed and chopped
- 1/2 cup fresh basil, chopped
- Dressing:
- Sea salt and black pepper
- 1/4 tsp dry mustard
- 1/2 cup plain nonfat yogurt
- 2 tbsp fresh lime juice
- 1/4 cup chopped fresh basil
- 1/2 rice wine vinegar
- 3 cloves garlic

In small bowl whisk together dressing ingredients.

Place cooked cooled beans and wheat berries in large bowl. Add diced Vegetables and herbs. Toss well. Pour dressing over salad. Season with black pepper and sea salt.
notes
Soaking the wheat berries in advance will speed up th cooking time.
