Baked Spinach & Couscous
ingredients
- 1 cup couscous
- 1.5 cups boiling vegetable stock
- 1/2 teaspoon salt
- 1/4 cup Olive Oil
- 3 garlic cloves minced
- 1 large onion, diced
- 1 can of chickpeas
- 1 28 oz can tomatoes-diced & fire-roasted are best (drain and reserve the juice)
- 1 1/2 tablespoons minced fresh basil or 1 teaspoon dried
- 5 OZ spinach (chopped up) 1 small bag
- 1 cup grated Muenster cheese

1. combine the couscous, boiling stock and salt in large bowl, cover with plate. Let sit 5 minutes, then fluff with fork

2. Preheat oven to 375. Heat olive oil in a large skillet over medium heat. Saute the garlic, onion, and chickpeas 10 minutes. Add the drained tomatoes and cook 10 minutes more, stirring frequently.

3. Mix couscous, tomato mixture, basil, and spinach together.

4. place half of the couscous mixture on the bottom of your baking dish and then add a layer of cheese, then add the rest of the couscous mixture and top with remaining cheese.

5. Cover with foil and bake for 25 minutes!
