Cabbage Soup
ingredients
- 1 medium onion, chopped
- 1 cup chopped celery
- 1 cup sliced carrot
- 2 cups sliced mushrooms
- 2 cups fresh or frozen green beans, cut into 2 inch pieces
- 1 medium head cabbage, chopped
- 2 cups fresh spinach leaves
- 1 16 ounce can petite diced tomatoes, undrained
- 1 12 ounce can black beans, drained
- 2 tablespoons tomato paste
- 2 tablespoons beef stock base
- 2 teaspoons garlic, minced
- 1 teaspoon onion powder
- 1 teaspoon black pepper
- 1 teaspoon Italian seasoning
- 1 pound ground chicken (optional)
- 8 cups water

In a large soup pot, cook onions and celery with chicken until no longer pink, breaking the meat up into small pieces.

Add remaining ingredients and bring to a boil, stirring.

Reduce heat and cover.

Simmer for 1 hour.
