ingredients

  • 1 medium onion, chopped
  • 1 cup chopped celery
  • 1 cup sliced carrot
  • 2 cups sliced mushrooms
  • 2 cups fresh or frozen green beans, cut into 2 inch pieces
  • 1 medium head cabbage, chopped
  • 2 cups fresh spinach leaves
  • 1 16 ounce can petite diced tomatoes, undrained
  • 1 12 ounce can black beans, drained
  • 2 tablespoons tomato paste
  • 2 tablespoons beef stock base
  • 2 teaspoons garlic, minced
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 pound ground chicken (optional)
  • 8 cups water

    In a large soup pot, cook onions and celery with chicken until no longer pink, breaking the meat up into small pieces.

    Add remaining ingredients and bring to a boil, stirring.

    Reduce heat and cover.

    Simmer for 1 hour.
