Fish with asparagus

ingredients

  • 350g skinned and boned white fish fillets
  • 2 cloves garlic
  • 20 asparagus spears
  • 2tbs peanut oil
  • 1 cup coconut cream
  • 2tsp chopped lemongrass
  • 1/4tsp ground chilli
  • chilli seasoning to taste
  • 1tsp grated lime rind
  • 1tsp salt
  • ground black pepper
  • fresh coriander

    Cut fish into 2cm pieces and cut asparagus spears in half. Heat oil in wok, stir fry fish, chopped garlic and asparagus for 2 minutes.

    Add coconut cream, lemongrass, ground chillies, chilli seasoning, lime rind, salt and pepper. Simmer for 5 minutes or until fish and asparagus are cooked.

    Garnish with coriander and serve with rice.
