Fish with asparagus
ingredients
- 350g skinned and boned white fish fillets
- 2 cloves garlic
- 20 asparagus spears
- 2tbs peanut oil
- 1 cup coconut cream
- 2tsp chopped lemongrass
- 1/4tsp ground chilli
- chilli seasoning to taste
- 1tsp grated lime rind
- 1tsp salt
- ground black pepper
- fresh coriander

Cut fish into 2cm pieces and cut asparagus spears in half. Heat oil in wok, stir fry fish, chopped garlic and asparagus for 2 minutes.

Add coconut cream, lemongrass, ground chillies, chilli seasoning, lime rind, salt and pepper. Simmer for 5 minutes or until fish and asparagus are cooked.

Garnish with coriander and serve with rice.
