Sicilian Chicken
Decadent!
ingredients
- 36 oz. boneless skinless chicken breasts cut into 1/2" strips
- Flour seasoned with garlic, pepper, salt, and italian seasoning
- 3 Tbs. olive oil
- 8 oz. thin fresh mushrooms
- 1 large green pepper sliced thin
- 4 quartered medium Roma tomatoes
- 12 basil leaves minced
- 1 regular jar Prego sauce
- 20 oz. package fresh cheese filled tortellini
- 2 oz. parmesan cheese
- 1/2 cup whipping cream

Cut 36 oz. boneless skinless chicken breasts into 1/2” strips. Dredge in flour seasoned with garlic, pepper, salt, and Italian seasoning.

In large skillet, heat 3 Tbs. olive oil and brown chicken strips and remove to separate platter.

Add 8 oz. thin fresh mushrooms, 1 large green pepper sliced thin, 4 quartered medium Roma tomatoes and sauté.

Add 12 basil leaves minced and 1 regular jar Prego sauce, simmer 1-4 minutes.

Meanwhile cook 20 oz. package fresh cheese filled tortellini drained and kept warm. Add 2 oz. parmesan cheese to sauce. Add 1/2 cup whipping cream and chicken -- stir to blend.

Preheat oven to 350 degrees.

Divide the tortellini into 6 oven proof baking dishes (pammed).

Top with chicken mixture top with 12oz shredded mozzarella.

Bake until cheese is browned 6 – 10 minutes.

Serve with garlic bread.
