No gravy needed for these mashed potatoes

ingredients

  • Based on what the requirements are for amount needed, adjust your ingredients accordingly.
  • Several nice sized Red potatoes.
  • Do not peel, but scrub well, cube and put on to boil.
  • Boil till nice and soft.
  • Fry some bacon and let cool (several strips)
  • In the bowl (glass or micro safe) you plan on mashing or blending your taters in, put these ingredients.
  • 2 cloves of freshly minced garlic
  • 1/4 diced, medium onion
  • 1 tsp salt
  • 1/4 to 1/2 cup heavy whipping cream (or milk)
  • 1/2 stick (more or less) of real butter
  • 1 8oz package of Philadelphia cream cheese (cubed)

    Heat all of the ingredients in the micro, stirring until all melted and making a nice paste. Add more cream or milk to thin to your needs. You may also, depending on how many potatoes you are fixing will want to increase or decrease all ingredients with the exception of the Philly Cheese ... more is better.

    After you are satisfied with your ingredients, drain your well cooked and soft potatoes to the bowl, crumble the bacon and mix with a good mixer or a small hand held blender. Sour cream is also good in the mix also!

    Put all of this in a large, lightly buttered glass baking dish, cover with fresh shredded cheese (not the bagged) broil long enough in the oven to melt the cheese on top and give it a golden brown crusty look.

    Remove, let cool a few minutes and serve.

    Broiling these with the cheese isn’t needed if you just want the mashed potatoes though!
