ingredients

  • 1 onion, sliced
  • 2 tbsp. butter
  • 1 tbsp. brown sugar
  • 1 large butternut squash, peeled and cubed
  • 1 cup chicken or vegetable broth
  • 1 can pears
  • 1/2 tsp. curry powder
  • 2 cups milk or 250g coconut milk
  • 1/4 each: cinnamon, ginger, nutmeg
  • 1 tsp. crystallized ginger, diced

directions

    Place squash in microwave and cook until tender, about 10-15 minutes.

  • 2

    Sauté onions in butter until golden, about 10 minutes then add brown sugar and spices. Cook 5 minutes over low heat. Add broth.

    Blend all ingredients and process until smooth.

  • 4

    Put in pot and simmer 10 minutes.
