Butternut Pear Soup
ingredients
- 1 onion, sliced
- 2 tbsp. butter
- 1 tbsp. brown sugar
- 1 large butternut squash, peeled and cubed
- 1 cup chicken or vegetable broth
- 1 can pears
- 1/2 tsp. curry powder
- 2 cups milk or 250g coconut milk
- 1/4 each: cinnamon, ginger, nutmeg
- 1 tsp. crystallized ginger, diced

Place squash in microwave and cook until tender, about 10-15 minutes.

Sauté onions in butter until golden, about 10 minutes then add brown sugar and spices. Cook 5 minutes over low heat. Add broth.

Blend all ingredients and process until smooth.

Put in pot and simmer 10 minutes.
