Crab or Salmon Cakes
ingredients
- 1 6oz to 8oz. fresh or frozen lump crab meat
- 1 egg slightly beaten
- 6 Tb. Fine dry bread crumbs
- 2 Tb. Finely chopped carrot
- 2 Tb. Finely chopped celery
- 1 Tb. Finely chopped onion
- 2 Tb. Mayo
- 3/4 tsp dry mustard
- 1/4 tsp. salt
- 2 Tb. Oil
- Lemon wedges

1. Thaw crab meat and drain. In a med. Mixing bowl combine egg. 4 Tb. Of bread crumbs, carrot, celery, onion, mayo, mustard, and salt. Gently stir in crab meat just until combined. Shape into patties.

2. Place remaining crumbs in a dish and coat both sides of the patties with crumbs. Chill well before cooking.

3. Cook patties in hot oil. Serve with lemon wedges.

Note: If using canned crab meat, omit the salt.
