Crab or Salmon Cakes

  • 1 6oz to 8oz. fresh or frozen lump crab meat
  • 1 egg slightly beaten
  • 6 Tb. Fine dry bread crumbs
  • 2 Tb. Finely chopped carrot
  • 2 Tb. Finely chopped celery
  • 1 Tb. Finely chopped onion
  • 2 Tb. Mayo
  • 3/4 tsp dry mustard
  • 1/4 tsp. salt
  • 2 Tb. Oil
  • Lemon wedges

    1. Thaw crab meat and drain. In a med. Mixing bowl combine egg. 4 Tb. Of bread crumbs, carrot, celery, onion, mayo, mustard, and salt. Gently stir in crab meat just until combined. Shape into patties.

    2. Place remaining crumbs in a dish and coat both sides of the patties with crumbs. Chill well before cooking.

    3. Cook patties in hot oil. Serve with lemon wedges.

    Note: If using canned crab meat, omit the salt.
