Buttermilk Panna Cotta
ingredients
- 1 1/2 t. Unflavored gelatin
- 1 T. Cold water
- 1 1/4 c. Heavy cream
- 7 T. Superfine sugar
- 1 3/4 c. Buttermilk

1. Mix the gelatin with the water and let sit for a few minutes.

2. Heat the cream with the sugar and stir until sugar dissolves. The cream should not boil.

3. Add the softened gelatin and stir until it dissolves. Turn off heat.

4. Add the buttermilk and strain.

5. Pour the buttermilk mixture into Martini glasses and chill about 2 hours.

Serve with a "float" of raspberry sauce
