Greek Macaroni Salad
This chop and dump salad is healthy, delicious, and great for picnic lunches with baby at the zoo or park because it doesn’t contain mayo. It keeps well in the fridge and is a nice alternative to traditional mac salad.
ingredients
- 1 c. cooked macaroni, whole wheat if desired
- 4 plum tomatoes, chopped
- 1 can chick peas
- 1 onion, chopped
- 1 can sliced black olives
- 4 oz. feta cheese
- Dressing:
- 1 tsp. salt
- 1/2 tsp. pepper
- 1 clove garlic, minced
- 1/2 c. olive oil
- 1/4 c. fresh lemon juice

Cook and drain macaroni. Rinse in cold water.

Combine macaroni with vegetables, chick peas, and feta.

Whisk dressing ingredients together and pour over salad.
