Ultimate Bean Salad
An absolutely fabulous and healthy meal with Corn Chips for scooping! So much flavor and super healthy to boot!
ingredients
- 1 can corn - drained and rinsed
- 1 can black beans - drained and rinsed
- 1 avocado
- half red onion - diced
- 1 red bell pepper - seeded and diced
- 1 tablespoon minced garlic
- 1 tablespoon ground cumin
- 1/4 teaspoon crushed red pepper flakes
- 1/4 cup chopped fresh cilantro
- 1/3 cup red wine vinegar
- 2 tablespoons olive oil
- 1/4 cup fresh lime juice
- salt and black pepper to taste

1. Place corn and black beans in a bowl. Stir in red onion, bell pepper, garlic and spices. Mix in vinegar, olive oil, and lime juice. Season with salt and pepper and allow to marinade for at least 30 minutes.

2. Peel and cube avocado and mix into salad just before serving.
