Cranberry Salad
ingredients
Salad- 1 pound fresh cranberries
- grated rind of 1 orange
- 1/2 cup orange juice
- 3 1/2 tablespoons lemon juice
- 1 1/2 cups sugar
- 2 (3-ounce) packages raspberry jello
- 3 apples, grated
- juice and rind of 1 lemon
- juice and rind of 1 orange
- 3/4 cup sugar
- juice from 1 large can crushed pineapple and water to make 1 cup
- 4 tablespoons cornstarch
- 1 cup whipping cream, whipped to make 2 cups

Grind cranberries in blender. Mix in orange rind, orange juice, lemon juice, and sugar. Mix and let stand in refrigerator overnight.

Mix 2 packages raspberry jello, using only half of the recommended amount of water. Add cranberry mixture and grated apples to jello. Pour into mold. Chill until set. Serve with fruit dressing.
Dressing
Blend sugar with cornstarch. Add liquids. Cook over medium heat until thick. Chill until cool. Fold in whipped cream.
