Thai Noodle Salad
The unique Thai flavors in this peanut and noodle dish are a welcome change from mainstream casseroles and pasta salads.
ingredients
- Salad:
- 1 lb thin spaghetti or Chinese noodles
- 1 cup shredded carrots
- 1 small to medium cucumber; peeled, halved lengthwise, seeded and thinly sliced
- 1/3 cup chopped green onion
- 1 red bell pepper, cut into strips
- Salad dressing:
- 1/4 cup peanut butter
- 1 1/2 tablespoons peanut or vegetable oil
- 2 tablespoons soy sauce
- 1 teaspoon sugar
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 2 tablespoons dry sherry
- 1 teaspoon sesame oil
- 2 tablespoons lemon juice
- 1 green onion, sliced
- 1/2 teaspoon chili powder
- 1/4 cup chicken broth
- 1/3 cup chopped peanuts for garnish

Cook pasta according to package directions. Combine cooked and drained pasta with all other salad ingredients in a large bowl.

Salad dressing:

Place all salad dressing ingredients, except peanuts, in a food processor or blender, and blend until smooth. Add dressing to pasta with vegetables and toss well. Sprinkle with peanuts and serve.
