Salad Dressing: Basic Vinaigrette
Basic french vinaigrette. Easily doubled.
ingredients
- 1/2 teaspoon Dijon mustard
- 1 Tablespoon lemon juice, red wine vinegar, tarragon or other seasoned vinegar
- 3 Tablespoons extra virgin olive oil
- 1/2 teaspoon honey (optional)
- 1/4 teaspoon salt
- Fresh ground pepper

In a small bowl, whisk the Dijon mustard and lemon juice and/or vinegar until blended. Add the olive oil, salt and pepper and whisk until combined and creamy.

Variations:

1 teaspoon mayonnaise
- 4
1/2 Tablespoon minced shallots
- 5
1/2 - 1 Tablespoon fresh (or 1/2 teaspoon dried) herbs (tarragon, basil, oregano, thyme, etc)

1/2 - 1 Tablespoon fresh chives, watercress or parsley

Add one to three of the above options to the basic dressing. Whisk to blend. Set the dressing aside until needed.
