Triple Chocolate Cheesecake

ingredients

  • 1/4 cp sugar
  • 1 tbsp butter
  • 1 tbsp egg white
  • 1 1/3 cp chocolate graham cracker crumbs
  • 3 tbsp dark rum
  • 3 oz semisweet chocolate
  • 1/4 cp chocolate syrup
  • 8 oz cream cheese
  • 8 oz Neufchâtel cheese
  • 1 cp sugar
  • 2 tbsp unsweet cocoa
  • 1 tsp vanilla
  • 1/4 tsp salt
  • 2 eggs
  • 1/2 cp sour cream
  • 1 tbsp sugar
  • 2 tsp unsweet cocoa

directions

Preheat oven to 350°. Combine first 3 ingredients and beat until blended. Add crumbs. Press into bottom and sides of springform pan. Bake for 10 minutes. Combine rum and chocolate. Melt until smooth. Add chocolate syrup. Heat oven to 300°. Combine cheeses, beating until smooth. Add sugar, cocoa, vanilla, and salt. Add rum mixture, beating until blended. Add eggs. Pour into crust and bake 40 minutes. Sombine sour cream, sugar, cocoa. Spread over cheesecake. Turn off oven and let cheesecake stand in oven for 45 minutes. Chill 8 hours.
