Baked Omelet
ingredients
- 1/2 cup onion, finely chopped
- 1 green pepper, finely chopped
- 1 red pepper, finely chopped
- 1/2 cup margarine, melted
- 3 dozen eggs, whisked vigorously
- 2 cups sour cream
- 2 cups milk
- 3 teaspoons salt
- 1/2 teaspoon pepper
- 3 cups cheddar cheese, shredded, divided
directions
Lightly saute onion and peppers. Mix remaining ingredients; with 2 cups cheese in a large mixing bowl; add onion and peppers. Mix well. Pour into a greased 9x13 pan. Sprinkle remaining cheese. Bake at 325° for 45 minutes.
