Spicy Green Beans
ingredients
- 1 lb. green beans (fresh or frozen)
- 2-4 cloves garlic, smooshed
- 1/2 tsp. crushed red pepper flakes
- 1 Tbsp. brown mustard seeds
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 2-3 Tbsp.olive oil

If using fresh beans, blanch for 1-2 minutes and set aside.

Heat oil in a large fry pan on medium high heat. When oil is hot, add mustard seeds. When mustard seeds begin to pop, add the garlic.

Stir fry the garlic until medium brown. (Don’t be afraid if the garlic appears to be burning. This actually releases more flavor.)

Add the red pepper flakes and stir for a few seconds.

Add the green beans, turning frequently.

Add the sugar and salt.

Let the beans simmer for roughly 8 minutes.(Frozen beans may take a bit longer to cook.) Be careful not to overcook the beans- they are better crunchy!

For variety, this recipe works nicely with 3 cups celery instead of beans.
