Carrot Cake Bars
ingredients
- 1 1/2 c all-purpose flour
- 1 1/2 tsp cinnamon
- 3/4 tsp nutmeg
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1/4 tsp allspice
- 1/2 c vegetable oil or applesauce
- 1 c brown sugar
- 2 eggs
- 2 c shredded carrot
- 1 can (8oz) crushed pineapple
- Topping:
- 3 oz cream cheese, softened
- 1/3 c sugar
- 1 Tbsp flour
- 1 egg
- 1/2 tsp lemon juice

Grease 13 x 9 pan and preheat oven to 350°

Combine dry ingredients and set aside.

Whisk oil, brown sugar, and eggs. Stir in carrots, pineapple and dry mix.

Spread evenly in pan.

Prepare topping: Whisk cheese, sugar, and flour until creamy. Add egg and juice.

Drop by spoonfuls into pan and swirl with knife.

Bake 25 minutes.
