Deli Macaroni Salad
ingredients
- 4 cups (16oz) uncooked elbow macaroni
- 1 1/2 cup mayonnaise
- 1 cup sour cream
- 1/4 cup cider or white vinegar
- 1 Tbsp mustard
- 2 Tbsp sugar
- 1 tsp salt
- 1/2 cup sliced green onion
- 1/2 tsp ground black pepper
- 1 1/2 cup sliced celery
- 1 1/2 cup chopped sweet red or green pepper
- 1 cup coarsely shredded carrot or thinly sliced radishes (both can be used)
- 1/4 cup chopped fresh parsley

Cook pasta according to directions; drain. Rinse with cold water to cool quickly; drain well.

Meanwhile, in large bowl, stir together mayo, sour cream, vinegar, mustard, sugar, salt and pepper.

Stir in cooled pasta and remaining ingredients.

Cover and refrigerate.

This recipe can be cut in half.
