Buttermilk Oven-Fried Chicken
ingredients
- 4 boneless, skinless chicken breasts
- 1 cup low-fat buttermilk
- 1 cup all purpose flour
- 1/4 tsp. ground cumin
- 1 tsp. salt
- 1/2 tsp. cayenne pepper
- 1/2 tsp. white pepper
- Canola cooking spray
- Canola cooking oil

Soak chicken in buttermilk in a gallon size zip-top bag for at least 3 hours in the refridgerator.

Preheat oven to 450*. Mix together flour and spices in bowl. One at a time dip and coat chicken breast in flour mixture, then spray each side well with cooking spray. Place in a 9-inch square baking dish coated with 2 tsp. canola oil.

Bake until chicken is cooked through, about 25 to 30 minutes.

Switch oven to broil and broil chicken until the outside is nicely browned.
