Orange Carrot soup
Creamy soup - a kid favorite!
ingredients
- 1 Tbasp. oil (I recommend coconut oil)
- 1 onion, finely chopped
- 6 large carrots, sliced
- 2 tsp. curry powder
- 1/4 tsp.lemon rind
- 1 cup orange juice
- 1 1/2 cups coconut milk (unsweetened)
- 2 cups vegetable stock
- sea salt and pepper to taste
directions
Heat oil in large saucepan. Add onions and saute until clear. Add carrots, curry powder, lemon rind and orange juice to pan, and cook until th carrots are soft. Stir in coconut milk and stock and simmer for 10 minutes longer. Add salt and pepper to taste. Remove pan from heat and set aside to cool slightly. Place soup, in batches, in a food processor or blender and process until smooth. Reheat if necessary.
