Simple Chicken Curry

ingredients

  • 1 rotisserie chicken
  • 1 can coconut milk
  • 1 yellow onion
  • 1 cup chopped carrots
  • 2 tbsp olive oil
  • 1-3 tbsp curry powder (depending on strength)
  • 1.5 cup golden raisins
  • 1 box instant couscous
  • 1/4 cup slivered almonds
  • 2 tsp cinnamon
  • 1/4-1 cup chicken stock (optional)

directions

Pull meat off of chicken. Saute chopped onion and carrots in olive oil, then add coconut milk, curry powder and 1 cup raisins and simmer for 5 minutes. Amount of curry powder optional for strength of curry itself and desired flavor of recipe. Add pulled chicken and simmer for additional 5 minutes. Chicken stock optional to change thickness of broth. Cook box of couscous according to instructions, then add remaining raisins, almonds, and cinnamon.
