Greek Salad

Ingredients

  • 1/2 pound feta cheese, crumbled
  • 1 1/2 English cucumber
  • 3 med. ripe tomatoes, cut in wedges
  • 1 head romaine lettuce
  • 1 small red onion, sliced
  • 16 kalamata olives pitted
  • Dressing
  • 1/2 cup oilive oil
  • juice of 1 lemon
  • 3 T balsamic vinegar
  • 2 T red wine vinegar
  • 2 T juice from olives
  • 2 tsp dried oregano
  • 1 clove garlic, inced
  • 1 tsp honey
  • 1/2 tsp worcestershire sauce
  • S&P to taste

    crumble feta and place in large bowl. Slice cucumbers and add to cheese with tomatoes and onions.

    In another bowl whisk all the dressing ingredients. Pour over cheese mixture and toss. Rinse and cut up romaine leaves and place on platter. Spoon cheese mixture over lettuce and serve.
