Zuchinni and Pineapple Bread

ingredients

  • 2 eggs
  • 1 C. oil
  • 2 C. sugar
  • 3 C. flour
  • 1 tsp salt
  • 1 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 2 tsp cinnamon
  • 1 1/2 tsp nutmeg
  • 2 tsp vanilla
  • 1 C. crushed pineapple with jui
  • 2 C. zucchini, peeled and grated

directions

Beat eggs, add oil, and sugar. Beat again. Add dry ingredients, vanilla and pineapple. Mix well. Add zucchini. Blend well. Pour batter into 2 greased 9x5 pans and bake at 350* for 1 hour.
