T.G.I. Friday's Jack Daniels Glaze

This copycat version tastes just like the sauce they serve at Friday’s. It is worth the effort to make it.

ingredients

  • 1 head of garlic
  • 1 TBA olive oil
  • 2/3 cup water
  • 1 cup pineapple juice
  • 1/4 cup teriyaki sauce
  • 1 TBS soy sauce
  • 1 1/3 cups dark brown sugar
  • 3 TBS lemon juice
  • 3 TBS minced white onion
  • 1 TBS Jack Daniels Whiskey
  • 1 TBS crushed pineapple
  • 1/4 tsp cayenne pepper

    Preheat oven to 325 degrees. Cut about 1/2 inch off the top or garlic. Cut the roots so the garlic will sit flat. Remove the papery skin from the garlic, but leave enough so that the cloves stay together. Place garlic in baking dish, drizzle with oil, and cover with a lid or foil. Bake for 1 hour. Allow to cool before handling.

    Combine water, pineapple juice, teriyaki sauce, soy sauce, and brown sugar in a medium sauce pan over medium heat. Stir occasionally until the mixture boils, then reduce heat until just simmering.

    Squeeze the sides of the head of garlic until the pasty roasted garlic is squeezed out. Measure 2 tsp into the saucepan and whisk to combine. Add all remaining ingredients to the pan and stir.

    Let mixture simmer for 40-50 minutes or until sauce has reduced by half and is thick and syrupy. Make sure it dose not boil over or burn.
