Almond Crusted Halibut
Time consuming, but great recipe
ingredients
- 1/3 cup dry white wine
- 2 tbsp cider vinegar
- 2 tbsp minced shallots
- 1 sprig fresh thyme
- 1 bay leaf
- 1/3 cup heavy cream
- 10 tbsp unsalted butter
- 3 tbsp fresh chives
- 2 tsp lemon juice
- 6 (6 oz) halibut fillets
- 2 tbsp vegetable oil
- 1/4 cup fresh bread crumbs
- 2/3 cup minced almonds
- 1 tsp melted butter
- 1 egg, beaten

Beurre blanc: Boil wine, vinegar, shallots, thyme, bay leaf until liquid evaporates. Add cream until liquid reduced by half. On low heat, whisk in butter slowly. Do not allow sauce to simmer.

Strain sauce and add chives, lemon juice, and some salt & pepper. Set bowl in warm water to keep warm.

Preheat oven to broiler setting. Dry halibut fillets. In skillet, heat 1 tbsp butter and saute fillets for 2-3 min per side until cooked through. Place on baking sheet

Combine bread crumbs, almonds, and melted butter. Brush fillets with egg and cover with almond mixture.

Broil fillets 1-2 minutes until browned. Serve covered with beurre blanc.
