Molassis Crinkles
From the Sable and Rosenfeld Cookbook adapted by Sara
ingredients
- 2 cups all purpose flour
- 2 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp powdered ginger
- 1/2 tsp salt
- 1 cup granulated sugar
- 2/3 cup corn or vegetable oil
- 1 egg
- 4 tbsp molasses
- 1 cup granulated sugar for rolling cookies

Preheat oven to 350 degrees. Combine flour, baking soda, cinnamon, ginger and salt.

In a mixing bowl, whisk together sugar and oil. Add egg and beat until light and fluffy. Beat in molasses. Gradually add sifted dry ingredients until dough just comes together.

Shape into small balls and roll in sugar. Place on ungreased cookie sheet.

Bake for 15 minutes until deep brown and cracked on top. Cool for 5 minutes then remove to cookie rack. Cook less for chewy cookies, more for crunchy.
