ingredients
- Pastry:
- 2 cups all-purpose flour
- pinch salt
- 2 pkgs (8oz each) cream cheese
- 1/2 c butter
- 2 Tbsp cold water
- Filling:
- 1 Tbsp butter
- 2 green onions finely chopped (1/4 c)
- 1/4 c red onion finely chopped
- 2 3/4 c cooked chicken breast, diced
- 1/3 c diced ham
- 1/4 c milk
- 1/4 c parsley
- 3/4 tsp pepper
- 1/4 tsp salt
- 1 lg egg white
- 1 tsp cold water

Preheat oven to 375°

To prepare pastry: In a lg bowl combine flour, and salt. Using pastry blender or two knives, cut in butter and cream cheese until crumbly. Stir in water to form dough, then wrap and chill for 1 hour.

To prepare filling: In a small skillet, melt the butter over med high heat. Add both onions and sauté until tender.

Spoon into food processor with chicken, ham, milk, parsley, pepper and salt. Process 1 minute or until smooth.

Spray 2 cooking sheets with cooking spray. On a lightly floured surface, roll out chilled pastry dough, 1/2 at a time to 1/8 inch thick.

Using 2 1/2 inch fluted round cutter, cut dough into 48 circles.

Spoon 1 Tbsp filling onto each circle, fold in half and seal edges together by pressing gently with fork.

Whisk egg white and water together. Brush each pastry with the mix. Bake for 20 minutes or until crisp. Serve hot.
notes
Pastry can be filled with just about anything from mushrooms and swiss to cream cheese and chocolate chips. Your imagination is your limit!
