Ingredients

Stock
  • 900 Ml Chicken Stock
  • 2 Star Anise
  • 1 Cinnamon stick
  • 2 Slices of Ginger
  • 2 Cups Chicken Thighs Cubed
Garnishes
  • 2 Cups Sliced Button Mushrooms or shitake mushrooms
  • 1 Bunch Rice Vermicelli Noodles
  • 2 TBSP Chopped Mint or Basil
  • 3 Green Onions sliced on an angle
  • Sambal Oelak to Taste.

Stock

Combine Stock, Star anise, Cinnamon stick and Peeled thinly sliced Ginger, Add Cubed Chicken Bring to a boil, and simmer until flavorful and chicken is cooked. About. 10 minutes . Strain. Remove Cinnamon seeds, Star Anise, Ginger. Discard. Pour

Soup

In a pot, Saute sliced mushrooms in Sesame oil, until brown. Add Stock, And Chicken. Bring to Simmer, Add Vermicelli noodles. Break them up into smaller pieces. So They fit on a spoon. Cook until Noodles are tender. Stir in Chopped mint and green onion, and Sambal oelak. Season to taste. (Salt ) Serve immediately.
