Wonton Soup
ingredients
- Soup:
- 5 c chicken broth
- 2 c water
- 2-3 thin slices fresh ginger
- 5 or 6 bok choy leaves, washed
- Pepper to taste
- Wontons:
- 1/2 lb ground pork
- 2 scallions, finely chopped
- 1 Tbsp minced ginger
- 1 small clove garlic, minced
- 1 Tbsp + 1 tsp soy sauce
- 1 tsp rice vinegar
- 1/4 tsp sesame oil
- 1/4 tsp salt
- 1/8 tsp pepper
- 1 tsp cornstarch
- 35-40 wonton wrappers

In a lg saucepan, combine the chicken broth, water, and ginger slices. Cover and bring the broth to a gentle simmer, then turn off the heat. Cut bok choy into small pieces and set aside.

Combine pork, scallions, ginger, and garlic in a mixing bowl. Add soy sauce, vinegar, sesame oil, salt, pepper and cornstarch and mix well with spatula.

Remove the wrappers from their pkg and cover with a damp towel to keep from drying out. Assemble wantons by dropping a teaspoon of mix in the middle. Cross wanton diagonally and seal edges with drop of water. indent the center, cross tips and seal with a drop of water.

Bring broth to a boil. Use slotted spoon to add wontons a few at a time, keeping broth at a low boil. Cook wontons until they are no longer pink inside. (at least 7 min) Turn heat back to high, add bok choy, cover and cook for three minutes. turn off heat and add pepper to taste.
