Corn Tomato Salad
ingredients
- 15 corns
- 2 tbsp salt
- 10 roma tomatoes, sliced.
- 2 yellow peppers, diced
- 2 medium red onions, minced
- 2 jalapeno or serrano cilis, minced
- 2 cloves garlic, minced/pureed
- 1/4 c lime juice
- 1 tsp salt
- 1/2 tsp pepper
- 1/2 c canola oil
- 2 bunches fresh oregano (1/4 c)

Cook corn, cut off cobb.

Combine corn, tomatoes, peppers & onions.

In a small bowl combine: chilies, garlic, lime, salt & pepper and whisk.

Drizzle in oil.

Pour over veges. Stir gently. Place in frig for 1-2 days.

Stir in oregano before serving.
