Corn Tomato Salad

ingredients

  • 15 corns
  • 2 tbsp salt
  • 10 roma tomatoes, sliced.
  • 2 yellow peppers, diced
  • 2 medium red onions, minced
  • 2 jalapeno or serrano cilis, minced
  • 2 cloves garlic, minced/pureed
  • 1/4 c lime juice
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1/2 c canola oil
  • 2 bunches fresh oregano (1/4 c)

directions

    Cook corn, cut off cobb.

  • 2

    Combine corn, tomatoes, peppers & onions.

    In a small bowl combine: chilies, garlic, lime, salt & pepper and whisk.

    Drizzle in oil.

  • 5

    Pour over veges. Stir gently. Place in frig for 1-2 days.

  • 6

    Stir in oregano before serving.
