  • 2 cups Instant brown rice, uncooked
  • 1 3/4 cups Warm water
  • 4 small Boneless, skinless chicken breast halves
  • 1/4 cup Reduced-fat ranch dressing
  • 1 1/2 tsp Chili powder
  • 1/2 cup Reduced-fat shredded sharp cheddar cheese
  • 4 cups Small broccoli florets
  • 1 Medium red bell pepper, chopped

    1. Preheat oven to 400˚F. Combine rice and water; let stand 5 min. Spoon evenly onto centers of four large sheets of heavy-duty foil; top each with one chicken breast half.

    2. Mix ranch and chili powder together in a small bowl; brush evenly on top of chicken. Top with cheese and vegetables.

    3. Bring up foil sides. Double fold top and both ends to seal each packet, leaving enough room for heat circulation. Place in a single layer on a baking sheet.

    4. Bake for 25-30 min. or until chicken reaches an internal temp. of 170˚F
