Jiffy California Bars
ingredients
- Base:
- 1/2 cup softened butter
- 3 tbsp powdered sugar
- 1 cup sifted all-purpose flour
- Topping:
- 2 eggs
- 2 tbsp all-purpose flour
- 1 tsp baking powder
- 1/4 tsp salt
- 1 cup chopped walnuts or cashews
- 1/2 cup quick cooking oats
- 1/2 cup flaked coconut
- 1 cup brown sugar firmly packed
- 1/2 tsp vanilla

Cream butter until soft and fluffy. Blend in sugar. Add flour a little at a time, mixing until smooth after each addition. Pat into a 9“x9” square pan (not greased). Bake at 375F for 15 min.

Beat eggs lightly in mixing bowl. Sift in flour, baking powder and salt. Add remaining ingredients. Spoon over shortbread base. Reduce heat to 325F and bake 25-30 minutes. Cut into 1“x3” bars
