Citrus Garlic Shrimp
ingredients
- 1 lb. linguine
- 1/2 c. olive oil
- 1/2 c. orange juice
- 1/3 c. lemon juice
- 3 garlic cloves, peeled
- 5 tsp. grated lemon zest
- 4 tsp. grated orange zest
- 1 tsp. salt
- 1/4 tsp. pepper
- 1 lb. uncooked medium shrimp, peeled and deveined
- Shredded Parmesan cheese and fresh parsley if desired.

1. Cook linguine according to package. Meanwhile in blender or food processor combine the next eight ingredients, cover and process til well blended.

2. Pour liquid into a large skillet and heat thoroughly. Add shrimp cook until pink. Drain pasta and toss with mixute.

3. Serve with cheese and parsley. A nice garlic bread would go great.
notes
Try not to overcook the shrimp. When the shrimp forms a "C" shape they are done, when the tail touches and forms an"O" they are overcooked and have a tendency to become tough.
