Broccoli Cole Slaw
Neither Jeff nor I like coleslaw, but this one is really good and not mayonaise based. Marisa turned us on to this and I think she got it from Paula Dean.
ingredients
- 2 bags Ramen Noodle Soup in Oriental Flavor
- 3/4 Stick of Butter
- 1/4 c Slivered Almonds
- 2 Bags (12 oz) broccoli cole slaw (in bagged salad section)
- Dressing Mix:
- 3/4 c Canola Oil
- 1/4 c Sugar
- 1/4 c Apple Cider Vinegar
- 1 Ramen Noodle Seasoning Packet

Put the ramen noodles in a bag and crush them with a rolling pin while melting butter in a large skillet over low-medium heat. Add the crushed ramen noodles and slivered almonds to the skillet and sauté, stirring occasionally.

Meanwhile whisk together all the dressing ingredients in a small bowl. Place the shredded broccoli into bowl and toss with the noodles and almonds. Pour dressing over salad and toss to coat.
