Zucchini Bars

ingredients

  • 3/4 cup butter
  • 1/2 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tsp. vanilla
  • 1 3/4 cups flour
  • 1 1/2 tsp. baking powder
  • 2 cups zucchini, shredded (about 3 medium)
  • 1 cup coconut, shredded
  • 3/4 cup walnuts, finely chopped
  • For frosting:
  • 1 cup powdered sugar
  • 2 1/2 Tab. milk
  • 1 1/2 Tab. butter, melted
  • 1 tsp. vanilla
  • 1/2 tsp. cinnamon

    Cream butter in medium-size bowl until light and fluffy. Beat in sugars gradually; add eggs one at a time. Beat in vanilla; stir in flour and baking powder.

    Stir in zucchini, coconut and walnuts. Spread evenly in well-greased 15x10x1 1/2-inch baking pan.

    Bake 40 minutes. Cool on wire rack.

    For Frosting: Beat all ingredients in small bowl until smooth. Spread frosting over warm baked layer. Cut into 1 1/2 inch squares.
