Thai Peanut Curry
ingredients
- Sesame oil
- Ginger
- Garlic
- Chinese Chillie Sauce
- Oregano
- Thyme
- Salt
- Lemon juice
- Lemongrass
- Peanut Butter (crunchy preferred)
- Milk (add coconut milk for a more robust curry)
- Basil (Thai basil preferred, fresh regular basil or dried basil would do)
- Veggies you want in your curry:
- Onions
- Peppers
- Carrots
- Broccoli
- Green Beans
- Mushrooms
- Baby Corn
- Green/Yellow Squash
- Optional:
- For protein add tofu (extra firm), or chicken, beef, pork, shrimp etc.

1. In some oil, fry the ginger, garlic, Chinese chillie, oregano, thyme, salt, lemon juice and lemongrass.

2. Add veggies and stir fry

3. Add Peanut butter and let it melt and coat all vegies

4. Add heated (medium temperature) milk to pot stirring till the milk and peanut butter combine to form peanut curry.
