Eggplant Rolled
An Italian favorite
ingredients
- 1-2 eggplants
- 1 egg
- 1 lb of Ricotta
- 1 lb Parmesan cheese
- Parsley
- Salt
- Pepper
- Bread crumbs

Cut eggplant in slices. Dip in egg and bread crumbs and fry. Mix together cheeses, parsley, pepper, egg.

Take each slice of eggplant and put some mixture in the center, fold over. Put each slice in a pan and put mozzarella cheese on top, along with gravy.

Cover with foil and cook for 1 hour
