Chicken Cacciatora
ingredients
- 1 Chicken (5lbs)cut into pieces or 3lbs of boneless chicken cut up
- 1/4 cup olive oil
- 1 cup flour
- 1 cup chopped onions
- 1 cup sliced mushrooms
- 1 cup julienne carrot
- 1 cup julienne green pepper
- 1/8 cup minced garlic
- 8 cup chopped, peeled plum tomatoes (I use canned tomatoes if I’m pressed for time using most of the juice)
- 1/2 cup tomato paste
- 3/4 cup red or Marsala wine (I prefer Marsala)
- 1 teaspoon oregano
- 1 teaspoon basil
- 1 teaspoon salt
- 1 teaspoon pepper
- Freshly grated Romano cheese (optional to put on when serving)

Wash and drain chicken pieces

Roll and coat chicken pieces in flour

Heat oil and brown on all sides to a golden brown. Allow cooked chicken to drain on a paper towel

Sauté onions, mushrooms, carrots, green pepper, and garlic in same pan for 10 minutes

Add tomatoes and sauté for another 5 minutes

Stir in tomato paste, wine, herbs, salt and pepper and cook over medium heat for 5 more minutes.

Add all the chicken pieces and mix well. Simmer on very low heat covered for 1 hour (2 hours is better)

Adjust salt and pepper to taste.
notes
My family dosen't like bone-in-chicken so I use bonless chicken breast cut into cubes. I coat them in flour and use a deep frier to brown them being careful not to over cook them.
