Jay's Pad Thai
This recipe comes from Jay Priebe, after all his world travels!
ingredients
- 4 chicken breasts, cut into cubes
- 12 kilo clean,deveined shrimp
- 1 package wide asian noodles
- 2 scallions, chopped
- 1/3 cup chopped peanuts
- limes, ready to squeeze on top
- 1 cup chicken broth (but have another cup to add as needed)
- 1 tsp ketchup
- 2 heaping tsp tamarind
- 1 tsp soy sauce
- 4 tsp peanut butter
- 1/4 cup fish sauce
- 1/4 cup brown sugar
- 1tsp red chili sauce
- 1/8 cup rice vinegar
- 1/2 can light coconut milk
- 2 eggs
- 1-2 cups chop suey, cleaned

1. Clean and de-vein 1/2 kilo of shrimp

2. Cook 4 chicken breasts, cubed.

3. Chop scallions and peanuts, get limes ready.

4. Boil water in med/large pot

5. Cook sauce in large sauce pan on low heat: chicken broth, ketchup, tamarind, soy sauce, peanut butter, fish sauce, brown sugar, red chili sauce, rice vinegar, light coconut milk.

6. Mix 2 eggs with a little bit of milk and make a thin, flat omelette. Roll the omelette and the slice into thin strips to put on top.

7. While making the omelette, cook noodles by sitting them in hot water for about 3 minutes. Strain.

8. Raise heat to Med/High for sauce, then add shrimps and noodles. (about a handful of noodles per person). If noodles need more time, add more broth. Lastly, add chicken and (optional) chop suey.

9. Garnish each dish with scallions, omelette, peanuts, and lime juice.
