Potato Breakfast Casserole

A delicious brunch dish that is easy to prepare.
ingredients
- 1 pkg (16-20 ounce) hash brown potatoes (in refrigerator section)
- 5 large eggs, lightly beaten
- 1 cup (4 ounces) shredded Swiss cheese
- 1/2 cup small-curd cottage cheese
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon hot sauce
- 1 green onion, chopped
- 6 slices bacon, cooked, drained and crumbled
- Paprika

1. Combine potatoes and next 7 ingredients and pour into a buttered 10-inch pie plate. Sprinkle with bacon and paprika. Cover and chill at least 8 hours or overnight.

2. Bake uncovered at 350 degrees for 35 minutes or until mixture is set. Cut into wedges to serve.

3. Garnish, if desired (fresh whole strawberries). Yield: 6 servings
