Pepper Steak
ingredients
- 1/4 cup oil
- 4 large pepper, sliced in strips
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 teaspoon oregano
- 1/2 cup margarine
- 1/2# mushroom,sliced
- 1# beef steak, in strips
- 1/4 cup flour
- 1/4 cup red wine
- 1 cup crushed tomatoes or a
- can of stewed tomatoes

In the 1/4 cup of oil saute the green peppers, along with the 1 clove of garlic for about 5 minutes. Season with salt and pepper and 1/2 teaspoon of the oregano. Cover and steam another 5 minutes turning several times. Put aside.

In a 1/4 cup of butter saute other clove of garlic and add mushrooms. Cook about 3 minutes, stirring often. Season with salt and pepper and 1/2 teaspoon of oregano. Pour mushrooms into dish with peppers.

In 1/4 cup butter saute final clove of garlic along with steak. Cook about 2 or 3 minutes on each side over moderate heat until brown. Season with salt and pepper, 1/4 cup flour, 1/4 cup wine and crushed tomatoes. Cook about 5 minutes, add peppers & mushroom and stir to coat. Serve over rice.
