PENNE WITH VEGGIES 'N' BLACK BEANS
ingredients
- 10 oz. uncooked penne pasta
- 1 c. sliced zucchini
- 1 c. sliced carrots
- 1/2 c. sliced fresh mushrooms
- 1/2 c. julienned red pepper
- 1 small onion, sliced thin
- 1 garlic clove, minced
- 1 T. each fresh or 1 t. each dried basil, oregano and thyme
- 1/2 t. salt
- 1/4 t. pepper
- 2 T. olive oil, divided
- 1 can black beans, rinsed and drained
- 2/3 c. chopped tomatoes
- 1/3 c. shredded Parmesan cheese
- 1 T. minced fresh parsley

Cook pasta according to package directions. Meanwhile, in a large nonstick skillet, saute the zucchini, carrots, mushrooms, green pepper, onion, garlic and seasonings in 1 T. oil until crisp-tender. Stir in the beans.

Drain pasta; add to veggie mixture. Add tomatoes and remaining oil; toss gently. Sprinkle with cheese and parsley.
