Ginger Molasses Crackle Cookie
ingredients
- 2/3 cup melted butter or vegetable oil
- 1 cup white granulated sugar
- 1 egg
- 1/4 cup molasses
- 2 cups Nutri Flour Blend or whole wheat flour
- 2 tsp powdered ginger
- 1 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- 1/4 tsp salt
- 1/2 cup coarse sugar for dipping

In a large bowl with an electric mixer or in a food processor, combine butter with sugar. Beat in egg and molasses.

Mix or sift flour with ginger, cinnamon, baking powder, baking soda and salt. Stir into batter. Refrigerate dough 1 hour.

Shape dough into balls about 1 tbsp each. Roll in coarse sugar. Place on baking sheets lined with parchment paper, leaving space between cookies. Press down lightly.

Bake 9 to 11 minutes in a preheated 350F/180C oven until cracked-looking but still soft and chewy. Cool on racks.
