Gingerbread
Grandma Peterson made this soft spicy sweet winter treat.
ingredients
- 1 c. molasses
- 3/4 c. sugar
- 1/2 c. shortening or oil (part butter)
- 2 cups flour (sift in w/spices)
- 1/2 tsp. cloves
- 1 tsp. ginger
- 1 tsp. cinnamon
- 2 tsp. baking soda dissolved in 1 T. hot water
- 2 eggs - well beaten

Combine ingredients above and beat with an electric mixer until very smooth. With mixer turned on low speed add 1 cup of boiling water. Batter will be thin.

Pour into greased and floured 8-inch square pan and bake in 350 oven for 30-35 minutes.

Serve while still warm. Top with either butter, whip cream, or a dusting of powdered sugar.
notes
When visiting Grandma Peterson's house in the winter this was a common treat. Best when it was still warm from the oven!
