CHICKEN GUMBO

A hearty gumbo that will warm you up.

ingredients

  • 1 pound chicken pieces
  • 1/2 pound spicy turkey andouille sausage
  • 1 cup water
  • 1 cup stock
  • 2 teaspoons oil
  • 2 teaspoons flour
  • 1/3 cup onion, finely chopped
  • 1 green pepper, finely chopped
  • 1/2 bunch kale, chopped into bite size pieces
  • 3 tomatoes, peeled & chopped (or 1 can petite diced tomatoes)
  • 5 ounces okra, chopped
  • 2 tablespoons plus 2 teaspoons long grain white rice, uncooked
  • 1/4 cup celery, finely chopped
  • 1/8 teaspoon thyme
  • 1/2 bay leaf

  • 1

    Bring chicken and stock to a boil; reduce heat and simmer for 30-45 minutes. Transfer chicken to a plate and set aside.

    In a stock pot, brown the spicy sausage. Set aside.

    Heat oil in sausage pan and stir in flour until golden in color.

    Add the onion and green pepper; continue to stir until onions are translucent.

  • 5

    Slowly stir in warm stock, increase heat, and bring to boil.

  • 6

    Add in remaining ingredients, chicken, salt and pepper.

  • 7

    Reduce heat to simmer for 50-60 minutes; add water as needed.
