CHICKEN GUMBO
A hearty gumbo that will warm you up.
ingredients
- 1 pound chicken pieces
- 1/2 pound spicy turkey andouille sausage
- 1 cup water
- 1 cup stock
- 2 teaspoons oil
- 2 teaspoons flour
- 1/3 cup onion, finely chopped
- 1 green pepper, finely chopped
- 1/2 bunch kale, chopped into bite size pieces
- 3 tomatoes, peeled & chopped (or 1 can petite diced tomatoes)
- 5 ounces okra, chopped
- 2 tablespoons plus 2 teaspoons long grain white rice, uncooked
- 1/4 cup celery, finely chopped
- 1/8 teaspoon thyme
- 1/2 bay leaf

Bring chicken and stock to a boil; reduce heat and simmer for 30-45 minutes. Transfer chicken to a plate and set aside.

In a stock pot, brown the spicy sausage. Set aside.

Heat oil in sausage pan and stir in flour until golden in color.

Add the onion and green pepper; continue to stir until onions are translucent.

Slowly stir in warm stock, increase heat, and bring to boil.

Add in remaining ingredients, chicken, salt and pepper.

Reduce heat to simmer for 50-60 minutes; add water as needed.
