Mexican Corn Soup
Corn, chilies, cheese, bacon combine into this unique soup.
ingredients
- 4 cups fresh corn kernels
- 1/2 cup chopped onion
- 2 tablespoons butter
- 2 tablespoons flour
- 2 cups chicken broth
- 2 cups milk or cream
- 1 cup grated cheddar cheese
- (1)4 ounce can green chilies
- 1/2 cup crumbled crisp bacon
- salt & pepper to taste
- tortilla chips

Saute corn and onion in butter;cook over medium heat until onion has softened. Stir in flour.

Gradually add in milk and broth; stirring until thickened. Do not bring to a boil. Add in green chilies and cheddar cheese; cook over low heat until cheese melts.

To serve, add 4 or 5 tortilla chips and sprinkle with bacon.
