Banana Nut Bread
A great addition to the breakfast table, or a quick snack for the middle of the day.
ingredients
- 1/3 cup shortening
- 1/2 cup sugar
- 2 eggs
- 1 3/4 cups flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 cup mashed ripe bananas (about 3 large)
- 1/2 cup chopped walnut (or pecans)

Cream shortening and sugar. Add eggs and beat well.

Sift dry ingredients. Add to creamed mixture alternating with banana, blending well after each addition. Stir in nuts.

Pour into well greased 9X5X3 inch loaf pan. Bake at 350 degrees 45-50 minutes or until done.

Remove from pan. Cool on rack. Wrap and store overnight.
