Cold Thai Noodle Salad
ingredients
- 1 lb fresh or dry fettuccine pasta
- 2 tablespoons toasted sesame oil
- 1/4 lb pea pods
- 1 red pepper sliced julienne style
- optional:
- grilled chicken
- chopped toasted peanuts
- DRESSING
- 6 tablespoons soy sauce
- 1 tablespoon peanut oil
- 3 tablespoons toasted sesame oil
- 1 tablespoon rice vinegar
- 1 tablespoon sugar
- 6 thinly sliced green onions
- 1 tablespoon finely grated ginger
- 2 large cloves garlic, minced
- 1 tablespoon Mongolian fire oil
- 1 - 2 teaspoons salt and pepper (to taste)

cook pasta, drain and cool in an ice bath for 30 seconds, drain well again. Add 2 tablespoons sesame oil then refrigerate

Blanch the pea pods, grain & cool. Add pea pods and prepared red pepper to pasta mixture.

Combine all ingredients for dressing, mix well. Toss noodles with dressing mixture, coating well. Add chicken or peanuts if desired. Serve cold.
